White Truffle of Bolognese Hills
HISTORY
Since ancient times, truffle has always had admirers; in recent years, the truffle market has experienced a considerable expansion, and consumers have also shown a growing interest not only for the product itself but for the typical places of production. Truffle prefers moisture and grows naturally underground, near some species of trees with which establish a symbiotic relationship. Broad-leaf trees such as poplar, willow and linden are truffle plants. Close to hazel and hornbeam trees, the precious white truffle ripens from September to December.

CHARACTERISTICS
This product is remarkable for its intense flavour and the ability of giving its dishes a full and unmistakable taste, even in small doses. Furthermore, the aromatic substances of truffles have a stimulating effect on digestion. Truffle is the most precious ingredient of Emilia typical cuisine: its taste is enhanced when combined with tagliatelle pasta, eggs, beef tenderloin and potatoes.

Harvested in the woods of the Bolognese Apennine, in the municipalities of Bazzano, Castello di Serravalle, Crespellano, Monte San Pietro, Monteveglio, Savigno, Vergato, Porretta Terme, Grizzana Morandi, Castel di Casio, Camugnano, Castel d'Aiano e Gaggio Montano, Sasso Marconi.
